Chef Jason Liang was born in South Carolina and raised in Taiwan, where Japanese cuisine sits alongside the local one. He apprenticed as a teenager under classically trained Japanese chefs at the Regent Hotel in Taipei, moved to Atlanta in 2006, and worked through One Sushi Plus in Brookhaven and Craft Izakaya before opening Brush Sushi Izakaya in Decatur in April 2016 — a restaurant that earned a 2022 James Beard Best Chef: Southeast semifinalist nomination. He relocated the project to Buckhead Village in late 2023 and opened O by Brush — a separate omakase counter within Brush Sushi — in July 2024. The 2024 Michelin Guide awarded it one star three months later. The 2025 Michelin Guide American South retained the star.
