Max Lotfi arrived in Atlanta as an engineering student and left — though he never actually left — as a restaurateur. The engineering degree is real; so is his thirty-year career spanning hospitality, food, entertainment, and technology. But what changed his direction was simpler: he could not find good home-style Persian food in Atlanta, and he was not willing to go without it. With his wife Arezoo Armaghan, he launched PersianBasket.com in 2015, an online market shipping the ingredients that make Persian cooking what it is — saffron, barberries, blue rock salt from Iranian mines, blue fenugreek, date molasses. The market found an audience not just in Atlanta but across the country, among Iranian-Americans and curious cooks who had the same problem Lotfi had: the pantry staples were not available locally, or what was available was not good enough.
