Michael Mina's Paris brasserie at ARIA: duck-fat frites, onion soup gratinee under Perigord truffle, and the brunch that books out first.
The space was Michael Mina's American Fish, which opened at Aria in December 2009. When that contract ended the resort asked Mina for a new concept, and he proposed the French restaurant he had wanted to build for years. He and the Aria staff flew to Paris to research it. Bardot Brasserie opened in January 2015 as Mina's 26th restaurant, named for Brigitte Bardot and designed by YWS Design and Architecture: a circular entrance, a short rise of stairs, cane chairs and burgundy leather booths on white marble, an open kitchen, and a faux sidewalk patio out front.
The frites are fried in duck fat and the onion soup gratinee is built on Perigord truffle and cave-aged gruyere. Brunch, Friday to Sunday, is the harder booking of the two services.
