Carbone opened in downtown Manhattan and became the anchor of Major Food Group's expansion. The Las Vegas room opened at ARIA Resort & Casino in 2015. Founders Mario Carbone, Jeff Zalaznick and Rich Torrisi brought in Ken Fulk, who declined to reproduce the original Manhattan room and instead built a theatrical sequence of spaces keyed to the city's own history.

Carbone Las Vegas serves Italian-American food at ARIA Resort & Casino, dinner only, Monday through Saturday. Signature dishes include spicy rigatoni vodka and veal parmesan; reservations are taken by phone.

Common questions

Is Carbone Las Vegas the same as the New York location?

Same restaurant group and menu lineage, different room. Ken Fulk deliberately did not reproduce the downtown Manhattan original; the Las Vegas space is built around vintage Las Vegas references instead.

What are the two rooms?

Sotto Cielo, known as the Blue Room, and La Fontana, the Red Room, which holds a Murano glass crystal chandelier as its centrepiece.

Does Carbone Las Vegas serve lunch?

No. Service is dinner only, Monday through Saturday from 5 p.m. to 10:30 p.m.
