Wolfgang Puck opened the first CUT at the Beverly Wilshire in Beverly Hills in 2006. The Las Vegas room followed in 2008, at The Palazzo, ahead of the locations that later opened in Singapore, New York and Washington. It has held the same Strip address since, with the bar running the dining room's hours and a private dining room booked through a separate line.
A5 Japanese wagyu and a bone-in tomahawk anchor the card, but the raw-seafood section that runs alongside the cuts is what separates this from the other Strip steakhouses.
