James Trees was born and raised in Las Vegas and started cooking through his high school culinary program, which led to an internship at the Mirage. His great-aunt Esther wrote the check that sent him to the Culinary Institute of America; when she died in 2016 she left him the money to open his own restaurant, and he named it for her. Esther's Kitchen opened on Casino Center Drive, then moved on March 8, 2024 into a 1940s corrugated steel and concrete building on South Main that had previously housed the Retro Vegas vintage store. Trees said the move was about capacity: reservations were frequently booked weeks out. The restaurant sits inside a group that also runs Ada's, Al Solito Posto, Bar Boheme, Petite Boheme and High Steaks.
