Kaoru Azeuchi trained in kaiseki in Japan for sixteen years. After culinary school he began studying the form, became sous-chef at Hotel Nogamiya at twenty-seven, and at thirty-five became head chef of a tofu kaiseki restaurant in Tokushima; he also spent three years studying French cooking under a chef who had worked in a French fine-dining kitchen. When Crown Prince Naruhito made a royal visit to Kagawa Prefecture, Azeuchi cooked for him. He moved to the United States in 2007 intending to own a restaurant, opened Yuzu Japanese Kitchen in 2014, and later returned to kaiseki proper. The restaurant on Spring Mountain Road now carries that name.

What are the seating times?
Two a night, 5:30 p.m. and 8:15 p.m., Thursday through Monday. The restaurant is closed Tuesday and Wednesday.
