Eric Kim visited hundreds of restaurants in Japan before opening in Las Vegas, working out the shape of a warm, small room with a traditional omakase at its center. The Spring Mountain Road address has carried his cooking since at least 2019, when Las Vegas Weekly reviewed it under the name Sushi Kame and described a dinner of Kagoshima A5 wagyu, miso-marinated black cod and ji-kinmedai. It now runs as Kame Omakase, reservation-only, on two seatings a night, with the menu reset by whatever came in that morning.
