Jimmy Li opened ShangHai Taste in Chinatown in 2019 with business partner Joe Muscaglione. Word about the xiao long bao moved outward from Las Vegas locals to visitors, and eventually to investors in Texas who approached Muscaglione about Plano. The Chinatown room stayed as it was: thirty-eight seats, an even tighter kitchen, and dumplings meant to be eaten within arm's reach of the steamer. The Review-Journal reported in January 2024 that the expansion into southwest Las Vegas and north Dallas came out of that limit rather than any wish to change the original. Li's mother, Adi Zheng, contributes her own knowledge and skills to the kitchen, which is the sort of thing that cannot be replicated in a second location.
