Brian Howard opened Sparrow + Wolf on Spring Mountain Road in Chinatown after cooking on the Strip at Comme Ca in the Cosmopolitan, and earlier under Thomas Keller and Kerry Simon. The Review-Journal covered the room in November 2017 as rustic and industrial, with dish-towel napkins. John Anthony runs operations, and the kitchen sells its own pantry line of pates, bakery items and house-made ingredients alongside dinner service.
Chinatown, ten minutes off the Strip. Sinigang clams with bone marrow rice, rabbit dan dan paccheri, a porterhouse aged in white miso, most of it out of a hearth oven.
