Costas Spiliadis opened the original Milos in Montreal in 1979 with the ambition of demonstrating that Greek cuisine, properly sourced and classically executed, belonged in fine dining rooms rather than casual tavernas. The New York location on West 55th Street followed in 1997 — the first time a Montreal restaurant had expanded to Manhattan — and Spiliadis chose the most demanding restaurant city in the world deliberately. The concept required New Yorkers to engage with the fish display, to price by weight, to trust a preparation philosophy that involves very little preparation. They did. Milos has held its position in midtown for over two decades because the sourcing is irreplaceable and the experience — the ritual of the ice display, the whole fish, the Aegean spreads — is genuinely unlike anything else in the city.
