Keiji Nakazawa Sr. began his training at 15 and spent the next 11 years apprenticing at 20 restaurants across Japan — from Aomori in the north to Fukuoka in the south, working through snack bars and storied counters including Kyubey. He opened his first restaurant at 26 and founded Sushi Sho in Yotsuya, Tokyo in 1989. It became a reference point for serious sushi internationally. He now oversees 30 establishments staffed by chefs he trained personally. The New York location opened on March 1, 2024, in a quiet ground-floor space near the New York Public Library, and earned two Michelin stars within months. A third star arrived in November 2025.
